1/2 cup brown rice
1 cup boiling water
1 tablespoon fresh ginger, chopped
1 clove garlic
3 tablespoons fresh lime juice
3 tablespoons unsweetened pineapple juice
1 tablespoon fresh cilantro, finely minced
6 oz. filet of orange roughy (sea bass or sole may be substituted)
Combine rice and water and simmer covered for 45 minutes on low heat. In a pan, combine the ginger, garlic and juices. Simmer covered 4 minutes. Add the orange roughy filet and simmer 5 minutes at a medium temperature, covered. Spread rice on a plate. Place the fish filet on the rice. Pour pan juices over the fish and rice. Sprinkle fresh cilantro over the top and serve. Serves 1. Recipe easily doubled.
