Blog: And Razzleberry Dressing

Cookies for Thursday

Not that this Thursday is special or anything. Its just Thanksgiving! One of my favorite holidays. Great food. Family and friends. Did I mention the food? If you’re curious what I’ll be bringing to dinner, check out my post here http://www.boomergirl.com/blogs/and-razzleberry-dressing/2007/jan/05/ever-so-gingerly/ .

I usually don’t repeat recipes here and on my personal blog, but my back was acting up recently and I’ve been out of baking commission for a bit. I realized that I needed a nice Thanksgiving recipe here. I made these cookies a few weeks ago and noticed that a lot of people have been Googling “cranberry pumpkin cookies” and landing on my blog. I thought that I’d share the recipe again here. I hope you like it!

Cranberry Pumpkin Cookies
(about 3 dozen cookies)

2 cups all-purpose flour

1/3 cup wheat flour

1 tsp. baking soda

1 tsp. baking powder

1 tsp. ground cinnamon

1 tsp. ground nutmeg

1/2 tsp. salt

1/2 cup unsalted butter (melted)

1 1/2 cups sugar

1 cup canned pumpkin

1 egg

1 tsp. vanilla extract

3/4 cup dried cranberries

1/2 cup chopped walnuts

In a large bowl, use a wooden spoon to combine butter, sugar, egg, vanilla, and pumpkin. Stir in flours, salt, soda, powder and spices. Add cranberries and nuts and stir until combined. Scoop out dough by the tablespoon onto ungreased cookie sheet. Bake about 15 minutes in a 350 degree oven. These cookies are delicious and very easy to make. Happy Thanksgiving!
